This 16.5cm santoku knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for mincing, slicing and dicing. The traditional straight edge and narrow sheep’s foot blade allows for precise cutting of meat, fish, vegetables and herbs. Each knife in the series has been created using highperformance VGMAX steel at Rockwell with a doublebevel blade angled at 16° providing excellent edge retention and cutting performance.
